Vinification and aging

The selected grapes, harvested manually in the early hours of the day, are destemmed and lightly pressed. The must settles at low temperature and then transferred to a new tank with the desired turbidity, where it will undergo alcoholic fermentation at around 16°C for 12-15 days. The wine thus obtained matures on fine lees at controlled temperature for about 3 months, then it is clarified, filtered, and bottled.

Organoleptic characteristics

The wine has a fairly lively pale pink color. On the nose, it has a good aromatic intensity of pink grapefruit, citrus, gooseberry, and aromatic herbs. On the palate, it is fresh, silky, with a good taste-olfactory persistence. The contrast between the acidity and the softness of the wine makes it enveloping and pleasant.
